To pochodzące z Australii ciasto stało się moim ulubionym od jakiegoś czasu – słodkie, pełne pysznych suszonych daktyli i jabłek. Z pełnoziarnistą mąką, a na wierzchu pyszna kokosowa posypka, polecam!
Na formę 20×20 cm:
- 125 g jasnej mąki orkiszowej
- 125 g razowej mąki orkiszowej
- 50 g ciemnego cukru muscovado
- 100 g miękkiego masła
- 2 jajka z chowu wolnowybiegowego
- 200 g niesiarkowanych, drylowanych daktyli
- 3 średnie jabłka o łącznej wadze ok. 300 g
- 1 łyżeczka sody
Na polewę:
- 50 g ciemnego cukru muscovado
- 50 g wiórków kokosowych
- 50 g masła
- ½ szklanki mleka roślinnego
Piekarnik rozgrzewamy do 180 stopni, blachę wykładamy papierem do pieczenia. Mąki mieszamy ze sobą. Jabłka obieramy, wykrawamy gniazda nasienne, kroimy w kostkę, daktyle siekamy. Jabłka i daktyle zalewamy 1 szklanką wrzącej wody, w której rozpuszczamy sodę (dzięki temu owoce rozłożą się równomiernie w cieście, nie opadną na dół), odstawiamy. Mikserem lub w robocie kuchennym ubijamy na puch masło z cukrem, dodajemy po jednym jajku, gdy poprzednie się dobrze połączy z masą. Ciągle ubijając dodajemy stopniowo wymieszane mąki, a na koniec na najwolniejszych obrotach odcedzone owoce.
Ciasto przekładamy do formy. Pieczemy ok. 30 minut, w międzyczasie przygotowujemy polewę – wszystkie składniki przekładamy do rondelka i podgrzewamy aż masło i cukier się rozpuszczą. Polewę wylewamy na ciasto i pieczemy kolejne 20 minut. Wyjmujemy z blachy po całkowitym ostudzeniu.
